Beetroot & Goats Cheese Salad

When I was in England last year I found that they had gone a bit beetroot crazy and a beetroot salad was to be found on every damn menu in town.

So, fuck buying that shit when you can make it yourself, right? I mean, who orders a salad. Pfft. You crazy people.


What Will I Need?
200g fresh beetroot (approximately 3) peeled and grated.
2 medium carrots, peeled and grated
100g baby spinach
50g goats cheese
1 tbsp extra virgin olive oil

What Now?
1. In a large bowl toss the beetroot, carrot, spinach, EVOO, salt and pepper (to taste) together.

2. Transfer to a serving bowl and sprinkle with crumbled goats cheese.

3. Serve.
