Tomato & Avocado Bruschetta

This is only slightly more of a recipe than my Salmon, Cream Cheese & Wasabi crostini, but I couldn’t resist sharing it with you – it’s a great, light, tasty treat for parties and entertaining, especially during the festive season.






What Will I Need?


3 tomatoes, diced & deseeded
2 spring onions, finely diced
1 clove garlic, finely diced
1/2 lemon, juice only

1 long French loaf / baguette
1 ripe avocado
Parmesan cheese, to sere

What Now?

1.      In a mixing bowl, combine the tomato, spring onion, garlic and lemon juice. Set aside for at least half an hour.

2.      Slice the French loaf into 1.5cm wide slices, and spread with avocado.

3.      Top each slice with the tomato mix and then grate parmesan generously over the top.

4.      Serve!
