Beef, Bacon & Chili Ragu

I have just moved into a small apartment in the city so thankfully I once more have a lovely little kitchen to call my own (for the next 6 months). After a busy day of moving boxes and attempting to unpack, hunger pains stirred and given I hadn’t cooked anything in so long I thought what better way to welcome yourself to a new home than to fill it with the aroma of a rich ragu bubbling away on the stove?

What Will I Need?


500g beef mince
2 rashers bacon, fat removed, diced
1 1/2 tbsp olive oil
1 onion, finely diced
1 tsp minced garlic
1 tsp minced chilli
½ tsp dried basil
1 tbsp tomato paste
400g tin diced tomatoes
1 cup beef stock

What Now?

1.              Heat the oil a pot over a medium heat before adding the onion and the bacon. Cook for about 5 minutes or until the bacon has softened.

2.              Next, add the garlic, chilli and the mince and cook for about 5 minutes or until the mince has browned.

3.              Stir through the basil, tomato paste, tomatoes and stock and then allow to bubble away, stirring occasionally, for an hour or until the sauce has thickened.

4.              Serve over pasta, or eat by itself.
