Slow Cooked Pork Tacos

I think you would be hard pressed to find someone who doesn’t love a taco or two and this is a twist on the regular minced beef or shredded chicken.

Also, each person likes to construct their tacos differently, so buy the shells (or tortillas) you like, the cheese you love in amounts you adore, and as many other ingredients (such as salsa) as you desire – this pork recipe should make enough for roughly four people and quantities can easily be doubled.

What Will I Need?

Slow Cooked Pork
500g pork, diced
1 tsp minced chilli
2 tsp ground cumin
2 tsp ground paprika
1 onion diced
2 garlic cloves, minced
1/2 tsp sea salt (or 1/4 tsp table salt)
1/2 tsp oregano
1 cup chicken stock

To Construct your Taco (Suggestions only!)
Taco Shells
Cheese, grated
Tomato, diced
Lettuce, shredded

What Now?

1.              Add all the pork ingredients to a slow cooker and cook on High for 6 hours.

2.              After this time if the liquid needs to reduce further, remove the lid and allow to cook on High an additional half an hour or so.

3.              Once cooked, use a wooden spoon to help the pork breakdown, if necessary, so it’s not too chunky.

4.              Construct your tacos by heating the Taco Shells according to packet instructions, filling the base with pork, and then topping with lettuce, tomato, cheese and salsa or whatever else you like to add.
