Creamy Salad Dressing

Salads can be one of the quickest and easiest things to mix up as a side for dinner. However, the quick and easy garden salad can sometimes need a little dressing to really help jazz them up, but when you’re gluten intolerant, finding a GF dressing can be exhausting!

This Salad dressing though was blitzed up in less than two minutes with ingredients readily to hand. Easy!

What Will I Need?

2 Eggs
1 ½ tbs Dijon mustard
½ tbs White Wine Vinegar
1 - 2 Cloves Garlic, minced (depending on your love for garlic)
1 tbs Lemon Juice
½ tsp Sugar
½ cup Virgin Olive Oil
Pinch of Salt
Pinch of Cracked Pepper

What Now?

1.         In your blender or food processor, blitz the eggs, mustard, vinegar, garlic, lemon juice and sugar until everything is combined – about 30 seconds.

2.         Season with salt and pepper as required and give a 5 second blitz to combine.

3.         Now, add the oil to the egg mixture and then blitz for one minute or until creamy and pale.

4.         Drizzle over a garden salad and enjoy!
