Rosemary & Red Wine Lamb Chops

I had to take the day off work today, due to being quite unwell, and so was more than glad I had these chops marinading in the fridge, ready to be cooked whenever hubby and I were feeling up to it.

About ten minutes out of the fridge to allow to warm a few degrees before we threw them on a blisteringly hot barbecue grill. Dinner was quickly ready and so tasty that the ease of their preparation is almost a tease! But then again, all marinades help create the most tender, tasty meat in the most simplest of ways!

What Will I Need?

4 Lamb Chops
½ cup Red Wine Vinegar
1 tbs Brown Sugar
1 tbs Wholegrain Mustard
2 cloves Garlic, chopped
2 Bay Leaves
2 tsp Fresh Rosemary
2 tbs Olive Oil

What Now?

1.         In a marinading bowl, or large bag, combine all ingredients and shake or mix until the lamb is completely covered in the marinade.

2.         Allow to sit for at least half an hour.

3.         Bring your grill to heat over a high temperature, and then cook each chop for 3-4 minutes on each side or until cooked to preference.

4.         Serve with baked corn and your favourite vegies!
