I am sure there are days when Hubby wishes for a simple salad of the garden variety rather than the eccentric fare I so often serve up. However, garden salads and my kitchen are strangers, only coming together for barbecues and picnics, and even then very rarely.
Either way, this is crunchy salad is full of flavour, and we love this with just plain grilled meat (as opposed to marinated) because you need a little balance and with such a flavoursome salad it wouldn’t be fair (to the effort you’ve gone to) to then diminish the salad by making it compete with something else!
Anyway, I suppose I should just get on with the recipe for you all!
What Will I Need?
250g Chickpeas, canned
250g Grape Tomatoes, halved or quartered, depending on size
1 Red Onion, thinly sliced
100g Feta, cut into small cubes
2 tbs Red Wine Vinegar
2 tbs Olive Oil
1. Rinse and drain the chickpeas and then transfer to a salad bowl.
2. To the salad bowl, we now add the diced tomatoes, feta, red onion, red wine vinegar and olive oil.
3. Mix well and then serve with some grilled chicken breast or pork chops.
