Greek cuisine is identifiable easily by its use of strong flavours – think feta, haloumi, and Greek yoghurt! Yes, the previous examples were all dairy, which may create a flaw in my argument, but you must admit the above are all very important features of Greek cooking!
Today’s recipe though features none of these things, and is quite simple in its design although still very flavoursome. As you can see from the photo it was served with Tzatziki, a fragrant cucumber and yoghurt salad (and dairy!), but it can just as easily be served with a (traditional Greek) salad.
What Will I Need?
4 Lamb Chops
2 tsp Cumin
2 tsp Fresh Rosemary, chopped
1 tsp Black Peppercorns (or ¼ tsp ground pepper)
1/2 tsp Chilli Flakes
2 tbs Lemon Juice
2 tbs Orange Juice
2 tbs Olive Oil
1. Time again to get out that marinade bag or bowl! Combine all ingredients, and give it a good shake or mix until the lamb is thoroughly coated.
2. Allow to sit for at least half an hour so the lamb can really absorb the flavours.
3. Over a high heat, grill the chops for about 4-5 minutes on each side, or until cooked to your preference.
4. Serve with tzatziki or a Greek salad!
