Australians love Tropical fruits, from pineapple to bananas and probably most of all – mangoes. Nothing epitomises spring, summer and sunshine more so than these golden fruits, and despite the fact bananas and pineapples are available from grocers year round, mangoes are special in the fact they’re only available come summer.
Mangoes are serious business in Australia so much so that the first box of mangoes produced each season are auctioned, and this year that box sold at auction for $30k – that’s serious business!
Luckily for you and I, mangoes at our supermarkets are considerably cheaper and so we can afford such summer delights as the Salsa below!
What Will I Need?
2 Mangoes, chopped into cubes
2 tbs Lime Juice
1 tsp Chilli, minced
2 Spring Onions, Sliced
2 Cloves Garlic, minced
2 tbs Mint Leaves, roughly chopped
1. Place your mango cubes into your serving bowl.
2. Next, in a smaller bowl mix the lime juice, chilli, spring onions, garlic and mint leaves.
3. Pour the lime juice mixture over the mango, and gently mix until the mango is coated in the lime, chilli and garlic mixture.
4. Serve and enjoy – this tastes especially nice with some spicy Mexican chicken.
