French Spring Chicken

Although almost a month and a half into the season, with the sun shining brightly, flowers blossoming and birds once more out and about there is no doubt that spring has sprung! And with the addition of daylight savings, and as such the sun not setting til much later in the evening, there can be no doubt that people’s moods have lifted and lightened alongside the weather.

In order to celebrate the warmer weather, after a unseasonable cool spot, I chose to make a chicken dishthat would encapsulate the golden sunlight and all the joy that spring encompasses - including Tarragon, awake once more after it's winter slumber.

This French Spring Chicken is  fragrant, mood lifting marinaded chicken perfect to enjoy eaten outside, warm sun shining down upon you, flowers blossoming, and just generally enjoying life.


What Will I Need?

4 Spring Onions, chopped
3 Garlic Cloves, sliced
4 tbs Lemon Juice
½ cup White Wine
1 tbs Extra Virgin Olive Oil
1/2 tbs Tarragon, dried
500g Chicken, filleted

What Now?

1.             In a bowl suitable for marinading your chicken, combine spring onions, sliced garlic, lemon juice, white wine, oil and tarragon.

2.             Stir so that all ingredients have been mixed together, before adding your chicken and allowing to marinade for an hour or so – as long as you like really!


3.             Once your chicken is sufficiently steeped in the fragrant marinade, heat about a table spoon of normal oil in a fry pan over a medium high temperature and cooking each chicken for a few minutes on each side, or until cooked through.

4.             This being French spring chicken and all, serve with a fresh salad and enjoy with a glass of white wine!
