Sometimes we’re home alone, or it could simply be that our family have already eaten or aren’t in the slightest bit hungry, but there will always be a time where you find yourself cooking only for yourself.
This, of course, doesn’t mean you have to sacrifice flavour or fancy, it simply means a treat just for yourself, whatever it is you want to eat, cooked on a smaller scale – perfect for one.
Traditionally, Alfredo is served over fettuccine or tagliatelle, however as I am gluten intolerant I unfortunately am limited in my pasta selections and so always have penne on hand, as opposed to some of the other more indulgent pasta styles.
Enough Penne just for yourself (I always use a “handful” measurement), cooked.
1 tbs butter
2 tbs cream
40g parmesan cheese, grated
Salt and Pepper to taste
Parsley to garnish
Glass of white wine, to enjoy
1. In a sauce over a very low heat, add butter and allow to melt. Next add cream and stir until butter and cream are blended together.
2. Now, we just need to add the parmesan cheese and stir until the parmesan has fully melted and created a rich velvety, creamy texture.
3. Once your Alfredo is ready, pour over your penne, and garnish with some chopped parsley.
4. Take your bowl of pasta and your wine, and settle into your favourite armchair with your favourite book, and enjoy your evening solitude.
