Garlic Lemon Pork is one of those recipes that are better using the most fresh ingredients possible. Rather than using long-life lemon juice – use a fresh lemon! Rather than using dried mint, use fresh! The combination of such fresh flavours in this meal make it worth that little bit of extra effort.
This, as usual, is for two people but there is enough marinade that you should be able to simply add an extra cutlet or two without having to add additional oil, juice, etc.
2 pork cutlets
2 garlic cloves
2-3 fresh mint leaves (about 1tsp, once chopped)
1 tablespoons olive oil
1. Firstly, let’s grab a bowl suitable for marinating meat. Into this bowl zest your lemon and then squeeze the juice from the lemon. Next, crush the garlic and add it to the bowl followed by finely chopped mint leaves and the olive oil.
2. After stirring the marinade, place the pork in the bowl and let sit in the refrigerator for at least an hour.
3. Once the hour has passed heat a frypan (or bbq, griddle etc) to medium high. As the pork marinade already has oil in it there is no need to oil the fry pan!
4. Pop the pork into the frypan and add remaining marinade and then cook over medium-high heat for 4-5 minutes on each side or until the pork is cooked to your preference.
What you have now is a wonderfully fresh tasting meat perfect with a light summer salad!
