Friday Night Finger Food & Footy

It’s Friday night, the game (St George Dragons vs Brisbane Broncos) starts in 15 minutes and the thought of cooking something incredibly elaborate doesn’t sound incredibly tempting, and the logistics behind eating a proper meal in front of the television seems incredibly improbable.

However, you have a chicken breast in the fridge…

Chicken Schnitzel bites!

Rather than using fillets, whole breast or tenderloins, dice the chicken breast into larger than normal portions. Coat with egg and GF breadcrumbs, and then cook in a generous amount of oil (about 5mm deep) in a fry pan on medium high – given the small size of the bites it should take no more than 10 minutes for the chicken to be cooked thoroughly.

Whilst the chicken cooks, rather than a salad, cut carrots, celery and cucumber into sticks and serve alongside cherry tomatoes to create a bite sized treat perfect for a Friday night watching the footy!

To add a flourish, serve with your favourite dipping sauce.

Sure beats McDonalds, and it’s a simple and perfect plan for a Friday!
